Turkey Pasta Salad with ZESPRI™ Kiwifruit
Makes 6 to 8 servings
Ingredients:
1/2 cup each: white wine vinegar, olive oil
2 tablespoons Dijon mustard
2 teaspoons basil
1 large clove garlic, minced
1 package (225 g/8 ounces) spiral noodles
2 cups broccoli florets
2 cups sliced crookneck squash
3 ZESPRI™ GREEN Kiwifruit
500 g (1 pound) smoked turkey, slivered
1 cup red pepper (capsicum) strips
1/2 cup sliced spring (green/scallions) onions
1/3 cup grated Parmesan cheese
Preparation:
Combine the vinegar, oil, mustard, basil and garlic. Mix
well.
Cook the noodles as package directs. Add the broccoli and squash and cook
for at least 30 seconds. Drain.
Pour dressing over the noodles, broccoli and squash and allow to cool.
Peel and slice ZESPRI™ Kiwifruit. Toss the turkey, red pepper, spring onions
and ZESPRI™ Kiwifruit with the pasta. Sprinkle with Parmesan cheese to
serve.
