Honey Rhubarb-Plum Ginger ConservesHoney Rhubarb-Plum Ginger Conserves

Makes 1 1/2 cups

Ingredients:

10 ounces (1 1/2 cups) rhubarb*, trimmed, cut in 1/2 inch slices
1 pound plums*, cut in bite-sized pieces
1 1/2 tablespoons ginger root, peeled, finely chopped
1 cup Clover or Orange Blossom honey
1 tablespoon orange zest

Preparation:

Combine all ingredients. Bring just to a boil; immediately reduce heat. Simmer, stirring frequently, until mixture thickens, about 40 minutes. Take special care not to scorch toward the end of cooking.

Cool; refrigerate in a tightly sealed container. Conserve can be canned; follow jar manufacturer’s instructions.

*Other fruits can be substituted; adjust honey to taste depending upon the sweetness of the fruit.
