Creamy Ham and Broccoli Soup

Makes about 4 servings
Ingredients:
3-1/2 cups
Jones ham cut
in small cubes
4 cups broccoli cut into small chunks, cooked, and drained
1/2 cup margarine
1/2 cup chopped onions
1/2 cup flour
6 cups milk
salt to taste
Preparation:
In skillet, melt margarine and add onion. Sauté until
tender but not brown. Blend in flour, then gradually stir in milk. Cook
until smooth and creamy. Add drained broccoli, ham cubes, and salt to taste.
Simmer until thickened; serve in bowls and sprinkle with cheese if desired.
Tip:
Substitute cauliflower or use a combination of both.
