Asian Paella

Yield: 12

6 pounds Pollock fillets, thawed and cut into 1-inch pieces
3 cups rice, uncooked
3 cups onion, chopped
6 cloves garlic, minced
3 tablespoons vegetable oil
2 tablespoons ground ginger
2 teaspoons turmeric
1 1/4 quarts chicken broth, boiling

Combine in 12x20x2-inch pan. Stir well. Cover and bake at 350 degrees 55 minutes or until liquid is absorbed and fish is opaque and flakes easily with fork.

2 pounds frozen Oriental stir-fry vegetables
2 cups frozen baby corn
1/4 cup lite soy sauce

Add. Cover and cook 10 minutes more until vegetables are tender. Remove from oven, let stand 10 minutes.

3 tablespoons fresh cilantro, minced
1 cup green onions, thinly sliced

Sprinkle with cilantro and onion before serving.
