Orange Mustard Pork

Yield: 12

1 1/2 cups unsweetened orange juice
1/3 cup Dijon mustard
2 tablespoons brown sugar
1 1/2 tablespoons cornstarch

Blend; set aside.

1 1/2 quarts fresh mushrooms, sliced
1 1/2 cups green onions, sliced
2 tablespoons vegetable oil

Cook; set aside.

3 pounds lean boneless pork

Thinly slice diagonally across the grain. Cook until browned.

1 1/2 quarts cooked brown rice

Stir into mushrooms and juice mixture. Cook, stirring until heated.

3 cups mandarin orange segments
1/3 cup slivered almonds, toasted

Add mandarin oranges; toss lightly until heated. Sprinkle with almonds.
