Title: Stewed Chicken Breast, Onions, Art. Hearts & Creamy Polenta
Yield: 4 Servings

Ingredients

           ***CHICKEN***
      4    chicken breast halves
      2 tb olive oil
      8    pearl onions; peeled
      1 c  artichoke hearts; quartered
      1 c  tomato; seeded and chopped
    1/4 ts sage
      2 ts minced garlic
      1 c  chicken broth
    1/4 c  creme fraiche   salt and
           -black pepp
           ***CREAMY POLENTA***
  1 1/4 c  milk
      1 c  water
    1/2 c  polenta
      2 tb unsalted butter
      2 tb grated parmesan cheese
           - salt and black pepper; to
           -taste

Instructions

Saute chicken in oil in skillet over high heat, turning to lightly brown on
both sides. Remove chicken from skillet.

Combine onions, artichoke hearts, tomato, sage, garlic, broth and creme
fraiche in skillet. Simmer for 20 minutes.

While vegetables are cooking in sauce, prepare polenta.

Add chicken to sauce, season with salt and black pepper and simmer for 5
minutes.

Spoon polenta in individual serving bowls, place chicken breast on polenta
and ladle sauce over chicken. Serves 4.

Polenta: Combine milk and water in large saucepan. Bring to a boil. Whisk
polenta into liquid, reduce heat and simmer for 5 minutes, whisking
occasionally. Whisk butter and cheese into polenta mixture. Season with
salt and black pepper. Cover and keep warm.
