Ingredients
3/4 c Butter Or Margarine
2 ea Eggs; Large
1 ts Vanilla Extract
1/2 ts Cinnamon
2 1/4 c Flour; Unbleached
1 tb Orange Rind; Grated
1/2 c Sugar
1 tb Rum
3 tb Milk
2 ts Baking Powder
1/4 c Almonds; Ground
1/4 c Raisins; If Desired
Instructions
Cream butter and sugar. Beat in eggs, rum, vanilla, and milk. Mix=20
cinnamon, baking powder, and flour. Add flour mixture to butter
mixture.=20
Gently mix in almonds, orange rind, and raisins. Pour batter into greased=
=20
muffin tins, filling half full. Bake at 375 degrees F. for 25 to 30=20
minutes, or until browned. Makes 18 muffins.
