Title: Black Beans & Rice Cuban Style
Yield: 6 Servings
Ingredients
1 1/2 Cups black beans
4 Slices bacon; chopped &
-fried
1 Clove garlic; crushed
1 onion; chopped
1 Teaspoon chili powder
Salt & cayenne pepper
Meat stock or broth
2 Cups cooked rice
Instructions
Wash beans, cover with 5 cups water. Soak overnight (or bring to boil,
boil 2 minutes, cover and
let stand 1 hour). Boil beans in salted water until tender. Drain. Add
bacon, garlic and onion.
Season with chili powder, salt, cayenne. Add broth to cover beans and
simmer until beans fall
apart. Pour over rice.
