Controfiletto Freddo E Picante - Spicy Cold Beef Rolls
Yield: 8 Servings
Ingredients
1 1/2 c minced celery
1 marinated red bell pepper;
-drained and diced
1 tb capers in brine; drained and
- finely
minced
2 marinated artichoke hearts;
-drained and diced
1/2 c good quality mayonnaise
1 ts Worcestershire sauce
1 ts Dijon type mustard
24 thin slices cooked roast
-beef (about 2 1/2 poun
Extra-virgin olive oil for
-brushing
Instructions
In a bowl mix the celery, red peppers, capers, and artichokes together.
In a small bowl, whisk together the mayonnaise, Worchestire sauce, and
mustard. Pour the sauce over the vegetables and mix gently. Spread about
1 1/2 tablespoons of the mixture evenly over each slice of roast beef
and roll up like a jelly roll. Place the rolls seam side down on a
decorative serving plate. Brush the top of each roll with a little olive
oil and serve
