Title: Gingered Shrimp And Soba
Yield: 4 Servings

Ingredients

      3 tb soy sauce
      2 tb dry sherry
    1/4 c  apple juice
      2 tb water
      1 tb ginger root; grated
      1 bn broccoli; cut into florets
      8 oz soba noodles
      1 tb sesame oil
      1 ea lemon; juiced
      2    cloves garlic; minced or
           -pressed
      1 lb shrimp; peeled and deveined
    1/2 c  green onion; cho

Instructions

Bring a large pot of water to a boil.
Meanwhile, in a small saucepan, combine soy sauce, sherry , apple juice,
water and ginger and simmer on medium heat for 5 minutes. Remove from heat
and set aside.
Blanch the broccoli in the boiling water until just tender-3-5 minutes.
Use a slotted spoon to remove broccoli from the pot and set aside to drain.
Add the soba noodles ( or whatever kind you have on hand) and cook for
8-10 minutes until tender but still firm.
While the noodles cook, combine sesame oil, lemon juice and garlic in a
non-reactive skillet and and warm on medium- high heat. Add the shrimp and
saute for 3-5 minutes until just pink and tender. Set aside.
Drain the noodles and return them to the still warm pot. Add the broccoli,
shrimp, sacallions and the say sauce mixture and, if necessary, toss
briefly on medium heat until everything is hot. Serve immediately.
