Title: Afternoon Tea: Hot Griddled Christmas Scones

Ingredients
225 g self-raising flour
50 g butter
1 pn salt
50 g caster sugar
50 g sultanas finely chopped; (50
- to 75)
1 egg; beaten with a

25 g finely chopped red and green
glace cherries
1 pn cinnamon
Instructions
1 Sift the flour and salt in a bowl and rub the butter in to make a fine
crumb. Stir in the sugar, fruit and cinnamon. Add the egg and milk and
mix to a soft dough.
2 Turn out onto a floured board and dust with flour. Roll out to 1/2"
thickness and cut into 8-10 rounds with a pastry cutter. Add some
butter
to a griddle pan and fry the scones in two batches for five minutes,
turning once.
