Stewed Chicken 'N Dumplings
Yield: 8 Servings
Ingredients
4 lb stewing hen; or large
-- broiler-fryer
3 c sifted flour
1 ts salt
2 ts baking powder
1/2 c shortening
1 Cup milk
Instructions
Cut chicken into serving pieces and place in large kettle with salted water
to cover. Cover and bring to boil, then reduce flame to simmer and cook
until tender.
While chicken is cooking combine flour, salt baking powder.
With pastry blender, fork or two knives, cut in shortening.
Add milk, mixing well.
Turn out onto lightly floured board or pastry cloth and knead lightly.
Roll out to 1/8" thick. Cut into strips.
When chicken is tender, drop strips into kettle. Cover and continue
simmering 20 minutes.
