Title: Roast Beef Po' Boy
Yield: 4 Servings

Ingredients

           ***SAUCE***
    1/4 c  mayonnaise
      2 tb whole grain mustard
      1 ts white wine vinegar
      2 ts capers
      2 tb fresh flat-leaf parsley;
           -finely chopped
           salt and freshly ground
           -pepper
           ***INGREDIENTS FOR
           -SANDWICH***
           remoulade sauce
      1    round loaf of bread; sliced
           -in half
           -- horizontally,
           -- inside scooped out
      4 sl swiss cheese
      3    tomatoes; thinly sliced
      2 c  iceberg lettuce; shredded
           salt and freshly ground
           -pepper

Instructions

How to Prepare the Sauce:

Combine all of the ingredients in a small bowl and season with salt and
pepper to taste. Let sit for at least 30 minutes in a refrigerator.

How to Prepare the Sandwich:

Preheat the oven to 375 degrees F.

Spread the Remoulade sauce in the bottom half of the bread. Layer the
cheese, tomatoes, beef, and lettuce over the sauce. Season the lettuce
with salt and pepper, place the top of the bread over the lettuce and
wrap
entire sandwich in foil. Place the sandwich on a baking sheet and place
another baking sheet on top with two bricks on it.

Place in the oven and bake 15 minutes. Remove from oven and cut into
quarters.
