Title: American Lamb Cassoulet
Yield: 1 Servings
Ingredients
10 oz canned diced tomatoes with
-green ch; iles
1/2 c scallions; sliced
1 clove garlic; minced
1 ts beef bouillon granules
1 ts italian herb seasoning;
-crushed
1 c tomato sauce
3/4 lb lamb shoulder; cut into 3/4
-inch cubes
1 md zucchini; halved lengthwise
-and sli
1 lb canned great northern beans;
- drained
Instructions
Prep: 10 min, Cook: 15 min.
Combine all ingredients, except zucchini and beans, in a microwave
casserole. Cover and microwave on high 3 minutes. Remove cover and stir.
Continue to microwave another 4 minutes. Stir in zucchini and beans and
microwave another 6-7 minutes, until meat is cooked throughout.
