Title: Cochiti Green Chile Stew
Yield: 6 Servings

Ingredients

      2 lb lean chuck; cut in small
           -cubes
      2 tb oil
    1/2 md onion; chopped
      4 md potatoes; peeled and diced
      4 md zucchini squash; chopped
     12 lg green chiles; roasted and
           -peeled
      1 ts garlic salt
      1 ts salt
      1 c  water

Brown the chuck in a little oil in a large deep pan. Add the onions, saute
3-5 minutes. Add the potatoes. When the ingredients have browned pour off
any oil. Add the zucchini, if used, the chiles cut up, garlic salt, salt
and water. Bring to a boil and simmer for at least 1/2 hour. Stew should be
eaten with a spoon like a hearty sooup.
