Title: Creole Corn
Yield: 6 Servings

Ingredients

      2 sl bacon
      1 lg onion; sliced,
      1    separated into rings
      1 md green pepper; chopped finely
  2 1/2 c  chopped fresh tomatoes
      1 sm bay leaf
      2 c  corn; cut from cob
    1/4 ts salt
    1/8 ts pepper

Instructions

Fry bacon until crisp. Remove from skillet, reserving drippings. Drain
bacon & crumble. Add onion & pepper to drippings in skillet. Cook over
medium heat, stirring constantly, until crisp-tender. Add tomatoes & bay
leaf to onion mixture. Simmer 10 minutes, stirring occasionally. Stir in
corn & simmer 10 minutes. Discar bay leaf. Stir in salt, pepper & bacon.
Yields 6-8 servings. (Great way to use up extra tomatoes & fresh corn.)
