Title: Egg Foo Young

Ingredients

    1/4 c  meat; any type as long as it
           - is
    1/2 c  onion
    1/2 c  celery
      1 c  bean sprouts
    1/2 c  bamboo shoots
      3    eggs; beaten
      1    peanut oil

Instructions

1 c cold soup stock; usually use
- won ton soup
5 ts cornstarch
2 ts soy sauce
1 ts mirin

(Makes 6 Pancakes)

Chop onion, celery, bamboo shoots finely and be close to measurements.
Sprouts couple chops. All should be fairly dry. Can substitute for what
you don't have, example, mushrooms.

1. Combine all ingredients except eggs.

2. Add eggs, and mix well just before cooking.

3. Fry in peanut oil until egg is cooked.

4. Remove to platter, pour some gravy over, garnish with green onions and
sesame seed.

GRAVY: Just before serving, bring to full boil, stirring constantly

NOTES

1. Best to do on electric griddle at 450ø, cover bottom with 1/8" oil

2. Faster you are to get mixture on pan after adding egg the better

3. Do only 1 recipe at a time, do not double the recipe, make two separate
if you need more. Each batch equals 6 patties, even them out, flatten with
pancake turner.

4. Good 5 to 6 min. first side, total cooking time 8 min., watch for
burning.

5. Second batch, wipe out pan, add new oil and start over

6. Can add a little cornstarch (1T to 1t water) to eggs if you want,
gives a little fluffier look.
