Title: Eileen Fulton'S "Wild" Grits
Yield: 4 Servings
Ingredients
1 c white hominy grits
5 c boiling water
1 1/2 ts salt
1/2 ts baking soda
1 c parmesan cheese; freshly
-grated
1 freshly ground black pepper
1 egg; beaten
1 tb milk
1/2 c italian bread crumbs
2 tb butter
1 scant tsp. instant onion
-flakes
Instructions
Add grits to boiling salted water. Reduce heat, simmer 25-30 minutes,
stirring occasionally. Cool for 30 minutes. Add baking powder, 3/4 cup
cheese, onion and pepper. Mix well. Combine egg and milk; add to cooked
grits. Pour mixture into well-greased 2 quart baking dish. Top with
breadcrumbs and remaining cheese. Dot with butter. Bake in preheated 350 F.
oven 25 minutes, or until browned on top. Great with chicken or meat
