Title: Indian Beans
Yield: 10 Servings
Ingredients
1 lb pinto beans -- dried
3 qt water
1 cn tomatoes -- (1pound)
1 lg onion -- chopped
8 sl bacon -- cut in 2 pieces
3/4 c celery -- sliced
1 1/2 ts salt
3/4 ts cinnamon
6 tb sugar
3 tb vinegar
Instructions
Wash beans; place in 6 qt. kettle with 3 qts. water and bring to a simmer.
Cover; cook 4 hours, or until tender.
Mix remaining ingredients with beans and cooking water. Place in 4 qt.
casserole; cover and bake in 350 oven 2 to 3 hours or until done. Add
water if necessary.
