Title: Mexican Lasagna #3
Yield: 6 Servings
Ingredients
1 lb ground beef
16 oz can whole tomatoes; cut up
1 cn french fried onion rings
2 eggs; slightly beaten
1 pk dry taco seasoning mix
12 flour tortillas
16 oz carton cottage cheese
8 oz shredded cheddar cheese
Instructions
Brown and drain ground beef. Preheat oven to 350 degrees. Grease a 9x13
baking pan. In a large skillet, combine ground beef, taco seasoning and
undrained tomatoes. Cook over low heat 10-15 mins. or until thickened.
Remove from heat and stir in half of the onions. Line bottom and sides of
pan with nine of the tortillas, pour in beef mixture, top with remaining
tortillas. Mix cottage cheese, eggs, and one cup cheddar cheese, pour over
mixture in pan. Cover and bake 40-45 mins. or until cottage cheese mixture
is set. Uncover, top with remaining cheddar cheese and onion rings. Return
to oven for 5 minutes. Let set about 10 mins. before serving. Garnish with
shredded lettuce and chopped tomatoes, if desired.
