Title: Kim'S Gazpacho
Yield: 6 Servings
Ingredients
3 cloves garlic
1 lg cucumber; seeded and cubed
1 c chicken broth; cold,
-defatted
2 c tomato juice
2 md tomatoes; ripe, quartered
1/2 sweet onions; chopped
1 sweet green peppers; chopped
1/2 c cilantro
2 limes; just the juice
ds tabasco sauce
salt and pepper; to taste
Instructions
In 2 batches, process 1/2 of the vegetables, juice and broth until finely
minced, but still with a crunch left. Mix the 2 batches in a storage bowl,
taste, adjust seasonings, chill, then serve.
Makes 6 servings
