Title: Scrambled Breakfast Sandwiches
Yield: 4 Servings
Ingredients
Vegetable Cooking Spray
1/4 c chopped sweeet red pepper
1 tb sliced green onions
1/2 c egg substitute, thawed
1 tb grated Parmesan cheese
1 tb skim milk
1/8 ts dried Italian Seasoning
Dsh ground white pepper
4 sl Canadian bacon
2 whole wheat English muffins,
- split and toasted
1 oz reduced-fat Brie cheese,
-cubed
Instructions
Coat a small nonstick skillet with cooking spray; place over medium-high
heat until hot. Add sweet
red pepper and green onions; saute until tender.
Combine egg substitute and next 4 ingredients; beat well with a wire whisk.
Pour over pepper
mixture in skillet; cook over medium heat until egg substitute mixture is
firm but still moist, stirring
occasionally.
Place 1 slice Canadian bacon on each muffin half. Spoon egg substitute
mixture evenly over
bacon and top with cheese. Broil 5 1/2-inches from heat(with electric oven
door partially
opened) 1 minute or until cheese melts. Serve immediately. Yield: 4
servings.
