Ingredients
2 md sweet potatoes (1/2 lb.)
2 cooking apples
2 cn red kidney beans, undrained
2 tbsp. honey
1/4 tsp. ground cloves
2 tbsp. plain yogurt
4 whole chicken legs or half
-chicken breast; s
1 tsp. brown mustard
2 tsp. catsup
1/4 cup seasoned dry bread
-crumbs
1/8 tsp. paprika
1 parsley (optional)
Instructions
Preheat oven to 375 degrees. Scrub sweet potatoes; cut into 1/4-inch thick
crosswise slices. Cut slices in half. Wash, slice and core apples. In a 2
quart
shallow casserole combine sweet potatoes, apples, beans with their liquid,
honey
and cloves. Cover tightly minutes, or until sweet potatoes are tender.
Remove
skin from chicken. Combine yogurt, mustard and catsup in a shallow dish.
Dip
chicken piece in yogurt mixture; then in crumbs. Place on baking sheet.
Sprinkle
with paprika. Place in oven after bean mixture has baked 30 minutes. Bake
chicken 25 to 30 minutes, or until liquid is clear when chicken is pricked
with
a fork. To serve: Stir bean mixture. Place chicken on top. Garnish with
parsley,
if desired. Makes 4 servings.
