Citruss Sponge Pudding
Yield: 4 Servings
Ingredients
1 c caster sugar
1/2 c self-raising flour
3 tb desiccated coconut
1 tb finely grated lemon rind
1 tb finely grated orange rind
2 tb lemon juice
2 tb orange juice
2 eggs; separated
125 g butter; melted & cooled
1 c milk
Instructions
1. Place sugar, flour, coconut, lemon rind and orange rind in a bowl and
mix to combine.
2. Beat in lemon juice, orange juice, egg yolks, butter and milk. Place
egg whites in a bowl and beat until stiff.
3. Fold egg whites into citrus mixture and pour into a greased 1 - litre
capacity ovenproof dish. Place in a baking dish, with enough hot water to
come halfway up the sides of the dish. Bake in a moderate oven (180C) for
45 minutes or until cooked.
