Title: Basic Puto (Filipino Steamed Rice Flour Cake)
Yield: 1 Serving
Ingredients
2 c regular white rice
1 1/2 c water
1 1/2 c granulated white sugar
3 ts baking powder
1/2 ts salt
Instructions
Soak rice in water for several hours. Grind using hand grinder into the
consistency of a thick batter. Add sugar, baking powder, and salt; mix
thoroughly. Pour batter into ungreased, small, round custard-cup like
molds til they are 2/3 full. Arrange molds in a steamer and steam 30 min.
or until a inserted toothpick tests dry. Turn out of molds and serve with
a bowl of freshly grated coconut to garnish.
Variation: Soak rice overnight and use a food processor to grind rice into
a thick paste ("thicker than poi" -- think thick grits). Only fill muffin
cups 1/2 full as this mixture is slightly fermented.
