Title: Bison Pot Roast
Yield: 1 Serving
Ingredients
3 lb Bison roast
2 tb Cooking oil
6 Onions; sliced
1 ts Salt
6 Peppercorns
1/2 ts Freshly-ground black pepper
4 Carrots; peeled
1 Celery stalk; chopped
1 Bay leaf
1 c Apple juice
1 c Water
6 Potatoes; peeled, quartered
Instructions
Heat oil in heavy roasting pan. Add bison roast and brown well on all
sides. Add salt, pepper, onions and saute. Add carrots, celery, bay leaf,
apple juice and water. Cover and bake at 275 degrees for 1 hour. Remove
from oven, add potatoes; cover and return to oven for 1 more hour or until
potatoes are fork tender. Check occasionally and add more water if it gets
too dry. Adjust seasonings.
