Title: Peas With Prosciutto

Ingredients
3 tb butter
2 shallots; minced
20 oz frozen baby peas
2 ts sugar
3/4 c chicken stock
3 oz prosciutto
salt and pepper
Instructions
Saute the shallots in the butter over medium high heat in a medium saucepan
until softened. Stir in the peas, sugar, and chicken stock and cook until
the
peas are warmed through and tender. Slice the prosciutto in thin strips.
Add
to the pea mixture and cook for 1 minute. Drain the pea mixture in a
colander
over a bowl. Return the liquid to the saucepan and reduce over high heat
until it thickens to a glaze. Add salt and pepper. Place the peas in a
serving dish, and pour the glaze over the top. Serve immediately.
