Title: Basbousa
Yield: 6 Servings

Ingredients

           SYRUP:
      3 c  granulated white sugar
  1 1/2 c  water
      4 dr lemon juice
           BATTER:
      1 c  granulated white sugar
      1 c  coconut
      1 c  yogurt
      1 c  vegetable oil
  1 1/2 c  semolina flour
      2    eggs
      2 ts baking powder
      1 c  heavy cream; optional
           GARNISH:
      1 c  pine nuts or almonds

Instructions

Prepare syrup by putting the sugar and water in a heavy saucepan. Bring to
a boil while constantly stirring to dissolve the sugar. Let it boil until
it appears clear. Add few drops of lemon juice and let it boil for a minute
or so. Remove from saucepan and let it cool completely.

Preheat the oven to 350ø F. In a bowl combine all the remaining ingredients
and stir until well mixed. If you are going to bake in a pan then oil it
before you pour the batter. If you want to do bite-size pieces, then line
the mini-muffin pan with the paper cups and pour the batter in them.
Decorate the surface with whole blanched almonds or with pine nuts. Bake
until golden.

Remove from oven and pour some syrup on each and return the pan to the oven
for a few minutes to dry the surface.

Yields a 9 x 13-inch baking dish.

NOTES : Sweet treats of yogurt, coconut, macaroon-style mini-muffins;
garnished with nuts and covered with syrup. Delicious dessert. It can be
served cut up or in small mini muffin shapes.
