Saute onions in a very small amount of oil-then add sliced okra,
chopped bell pepper, celery, parsley, onion tops, garlic, and about a
1/2 can of chopped tomatoes if you don't have fresh ones--"Well
mother what size can would that be-well honey you know and just use
about a 1/2 of the can, put it in and look at it dear, you can tell"
smother all this together till the okra and everything is done-about
l hour on low and do not cover the pot-she hates it when the pot is
covered-doesn't come out the same at all.

Now for the chicken--in a separate pot in some oil brown your
seasoned cut up chicken pieces-do not fry them-just nicely brown them
then add water and cook awhile (can brown and add sausage if you
like) Then when chicken has cooked a while (cooking the chicken in
water makes a rich chicken broth that will be the gumbo as opposed to
putting in cooked chicken and water to the okra mix) add some of the
okra smothered mix-keep cooking and add the okra mix till you get the
gumbo the right thickness and/or consistency that you like, and cook
till chicken is done--this is a great gumbo if you can figure it out.
