Title: Flour Tortilla Pizza (Aha)
Yield: 6 Servings

Ingredients

      6    8-inch flour tortillas
      1 ts italian herb seasoning
    3/4 c  no-salt-added spaghetti
      1    sauce
      1 c  sliced fresh mushrooms
    1/2 c  sliced green bell pepper
    1/2 c  sliced red bell pepper
    3/4 c  diced onion
    1/2 c  small broccoli florets
  1 1/4 c  shredded part-skim
      1    mozzarella cheese (about 5
      1    oz)
      1    vegetable oil spray
      2 tb minced fresh parsley

Instructions

Preheat oven to 325 F.

Let tortillas come to room temperature. Wrap in foil and warm in
oven for 5 minutes. Remove from oven and set oven to broil.

In a bowl, combine Italian seasoning and spaghetti sauce. Mix well.

Spread each tortilla with 2 T of sauce and 1/6 of the vegetables.
Sprinkle cheese equally over the six pizzas.

Lightly spray two large cookie sheets with vegetable oil. Place
pizzas on cookie sheets and broil 3-4 inches from heat. Cook until
cheese melts and begins to brown.

Remove from oven and sprinkle with parsley. Serve immediately.

Note: The raw vegetables used in this recipe make a delicious,
crunchy pizza. If you prefer a less crunchy topping, steam
vegetables in a steamer or a microwave oven.
