2 lb medium potatoes, peeled &
1 thick sliced
1 juice and zest of 1 lemon
2 oz butter
1 salt and pepper to taste
Instructions
Oven Temp. 190 C, 375 F, gas 5 Cooking Time 35 - 40 minutes
Arrange potatoes in the bottom of a large shallow ovenproof dish.
Sprinkle with lemon zest and half the juice. Season with salt and
pepper. Dot butter over the surface of the potatoes and bake for
fifteen minutes uncovered until potatoes are becoming golden. Remove
from oven and sprinkle with the remaining juice. Turn gently and
return to the oven for a further twenty to twenty-five minutes until
golden brown and tender.
