2 lb potatoes
1 tb lemon juice
1 ts sugar
1 salt and pepper to taste
1 1/2 ts grated lemon rind
1/4 c butter; melted
Instructions
Peel potatoes, cut them into pieces, and boil them with lemon juice in
salted water to cover until they are soft. Drain and shake the pan
over low heat for few minutes to dry them. Force the potatoes
through a sieve and work them with a wooden spoon until they are
smooth. Season the puree with the sugar, salt, and pepper, then mix
in the lemon rind. Press lightly though a ricer into a buttered hot
platter and sprinkle with melted butter. Serve immediately.
