Title: Rose Vinegar (Nelson)
Yield: 48 Servings

Ingredients

      2 c  rose petals -- lightly
      1    packed
      1    rinsed and drained dry
      3 c  white wine vinegar

Instructions

Place petals in a 3 to 4 cup jar. Add vinegar; cover. Let stand at
room temperature. After 1 day, push petals into vinegar. When petals
are bleached and vinegar taste of roses, about 3 days, strain vinegar
and discard petals. Use or store airtight up to 3 months. Makes 3

TIP: use glass jar with glass lid, fitted with rubber gasket, and
clamp closure.
