Title: Rice Pilaf With Peppers And Pine Nuts
Yield: 4 Servings
Ingredients
2 tb butter
8 garlic clove(s) peeled,
-thinly slic; ed
2 c chicken stock
1 c long-grain rice
1/2 c red bell pepper finely diced
1/4 c pine nuts, toasted
Instructions
In medium saucepan, melt butter over medium heat. Add garlic and saute
about 1 min, stirring constantly. Add stock and bring to boil. Stir in
rice. When mixture returns to boil, reduce heat, cover, and simmer
for 15 min. Stir in peppers and pine nuts, cover, and simmer for 5
min more. Season with salt and pepper to taste.
