Title: Big Game Marinade
Yield: 5 Cups
Ingredients
3 lg onions, coarsely chopped
4 lg shallots, chopped
3 stalks celery, chopped, tops
1 included.
3/4 c tarragon wine vinegar
1 tb salt
2 cl garlic, minced
12 crushed peppercorns
2 lg bay leaves, crumbled
1 bottle dry white wine
Instructions
Put all ingredients in a large saucepan and bring to a boil. Lower
heat and simmer for 5 minutes. Cool and pour over game pieces. Makes
about 5 cups.
Use for: bear, venison, elk, moose, sheep, goat, buffalo
