1 lb pinto beans, don't drain
4 eggs
3 c sugar
1 c shredded coconut
1 c chopped pecans
2 unbaked pie shells
Instructions
Blend together pinto beans and eggs in food processor for about 1
minute. Add sugar, coconut and pecans. Pour into unbaked pie shell.
Bake at 350 degrees for 50 to 55 minutes. Randy Rigg
