Title: Fried Rice
Yield: 6 Servings
Ingredients
vegetable cooking spray
3 c cooked brown rice
3 ts vegetarian bouillon; or
-chicken bouillon
2/3 c frozen peas
1/2 c egg substitute, liquid
1 pk firm tofu
(freeze first)* cut into
-cubes
9 green onions; diced
3/4 c fresh spinach; torn small
-pieces
1 tb minced Garlic
Instructions
Spray large frypan with oil. Place eggs in and scramble. When eggs are
cooked add garlic, peas, tofu, rice, onions, and spinach. Heat until
warmed through.
Elaine's Notes: I freeze the tofu packed in water first before using. Be
sure to thaw and press out liquid from tofu. When freezing It changes the
texture from jello to more meatlike.
