Title: Chicken Waikiki

Ingredients

      1    chicken; cut up
      1 cn chunk pineapple; (20 oz.)
           -drained
      1 c  sugar
      2 tb cornstarch
    3/4 c  vinegar
      1 tb soy sauce
  1 1/4 c  liquid; * see note
      1    green bell pepper; cut in
           -rings

Instructions

* Pineapple juice from pineapple, plus enough water to make 1 1/4 cups.

Brown the chicken and place in casserole or 9x13-inch baking dish. Mix
sugar, cornstarch, vinegar, soy sauce, and pineapple juice; boil 2
minutes. Pour over chicken. Bake 30 minutes at 300 to 350 degrees. Then
add the drained pineapple and green pepper rings to top of casserole. Bake
30 minutes more.
