Title: Mini Ice Cream Sandwiches

Ingredients
1 pk Upside-Downs; (Frosted
-Oatmeal
-- Girl Scout Cookies)
-- (7 1/4 ounces)
1 pt butter pecan or vanilla ice
-cream
1/2 c miniature chocolate chips
Instructions
Place half the cookies frosted side up on a cookie sheet. Place a scoop of
ice cream on top of each and top with the remaining cookies, frosted side
down, squeezing the cookies together until the ice cream is pushed to the
edges. Freeze for 30 minutes, or until the ice cream is slightly firm.
Remove from the freezer and roll the sides of the sandwiches in the
chocolate chips. Freeze for 1 hour, or until firm. Serve, or wrap each
individually until ready to serve.
