8 oz packaged baked marinated
-tofu
1/3 c tofu mayonnaise; up to 1/2
1 lg celery stalk; finely chopped
1 scallion finely chopped;

1 (white and light green part)
4 regular or 6 mini-size pita
-breads; warmed
1 and cut crosswise in half
Instructions
MAKES 4 TO 6 DAIRY-FREE
This is a great family lunch favorite in my home-even tofu skeptics love
it. Since it is rather crumbly, its ideal to stuff into pita pockets.
In medium bowl, crumble tofu. Add mayonnaise, celery and scallion if
using
and stir until well combined.
Stuff mixture into warmed pita bread halves and serve.
