Rice And Black Beans

Ingredients
1 ts olive oil
1/2 red onion; diced
2 cloves garlic; minced
1 c chicken stock; fat-free/low
-salt
1 1/2 c tomato sauce
1 c long-grain brown rice;
-uncooked
1/2 c black beans; drained and
-rinsed
1/2 ts cumin
1/2 ts creole seasoning
Instructions
1. Spray saucepan with cooking spray; add olive oil and heat. Add diced
onions and saute. Add chicken stock and tomato sauce. When boiling, add
rice. Simmer for 1 min; then cover and steam until done, about 40 to 45
min.
2. Combine black beans with cumin and seasoning. Microwave 1-1/2 min.
on high. Using a large slotted spoon, smash beans until half are mush.
Combine with hot, cooked rice.
