Ingredients
----------------------ANCHO BARBECUE SAUCE----------------------------
1 ts olive oil
1 sm onion; minced
2 cloves garlic; chopped
3/4 c tomato puree
4 dried ancho peppers; roasted
- and
1 ; pulverized
1/4 c hoisin sauce
2 tb cayenne sauce
1 ts ground cumin
1/4 ts chile powder
1/2 ts cracked black pepper
1 salt to taste

18 chicken wings or drumettes
1 salt and black pepper to

Instructions
For the sauce, heat olive oil in a saucepan until very hot. Add onion and
garlic and saute until you can smell the aroma. Add tomato puree and simmer
over low heat for about 2 minutes. Add peppers, hoisin, cayenne sauce,
cumin,
chile powder, and pepper and simmer for about 5 minutes, stirring often.
Season with salt and set aside.
For the chicken, preheat oven to 350 degrees F. Place wings or drumettes on
a
baking sheet and season with salt and pepper. Bake for about 5 to 10
minutes.
After 10 minutes, brush generously with barbecue sauce. Bake for another 10
minutes, until chicken is tender. Serve warm.
Serves six.
