Vegetable And Nut Stir-Fry

Ingredients
50 g mange tout; ((2oz)
200 g beansprouts; (7oz)
2 tb sesame oil
100 g mixed nuts; (3 1/2oz)
1 green chilli; finely chopped
2 cm; (1 inch) piece root
1 ; ginger, finely
1 ; grated
1 leek; cut into thin
1 ; julienne style
1 ; strips
2 carrots; cut into thin
1 ; julienne style
1 ; strips
1 red pepper; cut into thin
1 ; julienne style
1 ; strips
Instructions
Bring a pan of water to the boil and blanch the sweetcorn for 1 minute the
mange tout and the beansporoouts for 30 seconds. Drain and refresh in
cold water.
Heat 1 tablespoon of the oil in a frying pan and cook the mixed nuts for 2
minutes.
Add the remaining oil and fry the ginger and chilli for 1 minute. Add the
leek, carrots and red pepper and stir-fry for 2 minutes, add the courgette
and cook for another 4 minutes. Finally add the beansprouts, sweetcorn
and mange tout and stir-fry for a further minute.
