Title: Mango Coriander Salsa
Yield: 4

Ingredients

      1 lg mango; peeled and chopped
      1    ; into 1cm (1/2 inch)
      1    ; pieces
      2 tb red onion; finely chopped
      1 ts freshly chopped red chilli
      3 tb lime juice
      1 lg pot coriander; leaves only;
           -chopped
      1 ts tamarind
      2 ts caster sugar
      1 ds fish sauce
    1/2 ts sesame oil
      1 tb white wine vinegar
     25 g  ginger; finely chopped
      1    ; (1oz)
      1    salt and freshly ground
           -black peppe; r

Instructions

Combine all the ingredients in a large bowl. If you require a finer salsa
it can be blended in a food processor or with a hand blender.

Refrigerate until required.

NOTES : A delicious salsa with the complimenting flavours of coriander,
mango and chilli.Ideal served with seared steak or fish.
