Xmas Buffet: Bulghur Wheat Pilaff

Ingredients
1/2 red onion
1 oz fine spaghetti
10 oz bulghur wheat
3/4 pt chicken stock
2 tb flaked almonds
2 tb pine nuts
2 tb chopped parsley
2 tb sultanas
1 salt and pepper
2 tb olive oil
1/2 oz butter
Instructions
Peel and finely chop onion. Break spaghetti into short lengths. Rinse
bulghur wheat.
Heat olive oil and butter in a saucepan. Gently fry onion until softened.
Mix in bulghur wheat, spaghetti, stock, salt and pepper.
Bring to the boil. Cover and simmer for 10 minutes until stock absorbed.
Meanwhile, dry-fry pine nuts and flaked almonds until golden.
Turn bulghur wheat into serving dish. Mix in flaked almonds, pine nuts
and sultanas. Sprinkle over parsley. Serve warm or cold
This deliciously nutty pilaff goes well with cold meats or warm stews.
