Title: Rice Tart

Ingredients

      1 l  milk
      2    thin strips lemon rind
    200 g  sugar
     70 g  arborio rice
      4    eggs; plus one egg yolk
     60 g  almonds; chopped
     75 g  candied fruit; (lemon or
           -cedro are
      1    ; better)
      1 sm glass of strega liqueur
      1 pn salt
      1    quantity of shortcrust
           -pastry

Instructions

Boil the milk, lemon and sugar, then add the rice and salt. Cook very
slowly and keep stirring until reduced to an unsmooth paste.

Beat the eggs and the yolk and add the rice mixture spoon by spoon. At
the end put in the Strega liqueur and mix with the chopped almonds and
candied fruit.

Layer a baking tin with fine shortcrust pastry, fill with the mixture and
bake for one hour in a medium oven.
