Title: Flax Banana Bread #2
Yield: 20 Servings

Ingredients

  1 3/4 c  flour
    3/4 c  flaxseed granules
      1    or ground flax
    1/2 c  sugar; plus
    1/2 ts stevia
      1 ts baking powder
    1/2 ts baking soda
    1/2 ts salt
      3 lg eggs
      1    or 3/4 cup egg substitute
    1/3 c  applesauce
      1 c  bananas: 2-3 ripe; mashed
      1 ts ground cinnamon
      1 ts ground nutmeg

Instructions

Preheat oven to 350F.

1. In a large bowl mix together flour, flaxseed, sugar, baking powder,
baking soda and salt.

2. In a separate bowl beat together eggs and applesauce. Add dry
ingredients and mashed banana alternately to egg and oil mixture, stirring
until dry ingredients are moistened.

3. Pour into a greased loaf pan. Combine nuts, brown sugar and cinnamon
and sprinkle over batter in loaf pan. Pat down gently into batter. Bake
for 55-60 minutes.

YIELD: 1 loaf/20 slices; 1 slice = 119 calories, 1g fat (8%), 22mg
cholesterol Exchange = 1 starch + 1 fruit
