Ham And Rice Loaf
Yield: 4 Servings
Ingredients
2 tb oil
1 lg onion; chopped
1/2 ts ground cumin
1/2 ts dried oregano
1/2 c salami; diced
1 1/2 c long-grain white rice
-(300g); uncooked
3 c boiling water
2 tb tomato paste
1 sm chicken bouillon cube;
-crumbled
1 c frozen peas; 125g
1/2 c chopped ham
Instructions
Line a loaf pan with foil,grease foil. Heat oil in pan, add onion, cumin
and oregano, cook stirring until onion is soft. Add salami, cook for a
further 2 minutes.
Stir in rice, cook, stirring for about 2 minutes or until rice is
transparent.
Stir in combined water,pasta and stock cube, bring to boil, simmer, covered
for about 10 minutes, without stirring. Stir in peas and ham, cook,
covered for further 5 mimtes. Spoon rice mixture into prepared pan, cover.
Place weight on loaf and stand for 10 minutes. Turn onto plate and slice.
