Title: Laredo Beans & Greens Burritos
Yield: 6 Servings

Ingredients

      2 cn green chile; chopped
      3 cl garlic
      1 md red onion; quartered
      1 c  reduced fat monterrey
           -jack/colby ch
    3/4 c  fresh cilantro; loosely
           -packed
    1/2 tb vegetable oil
      4 oz pork; in small cubes
      1    or minced
     16 oz hominy, canned; rinsed and
           -drained
     32 oz black beans; rinsed and
           -drained
      6 oz spinach leaves; prewashed
     18 sm corn tortillas

Instructions

Here's a recipe I adapted from Bon Appetit. I reduced the meat, oil,
and cheese. I boosted the amount of beans. I used corn tortillas
instead of flour tortillas. I thought it worked pretty well and
it's packed with good stuff for you (beans, spinach, chilies).

Note that this recipe was in the Food Processor column so the
instructions include using one. You can do everything by hand, but
it will take longer. It's pretty quick with a food processor.

Laredo Beans & Greens Burritos (serves 6 generously)
(adapted from Bon Appetit March 1987)

1. Position rack in center of oven and preheat to 400 degrees

2. Mince garlic in food processor. Add onion and chop coarsely.
Remove and set aside.

3. Heat oil in heavy 12" skillet over medium-high heat. Add
green chilies, garlic, onion and pork. Saute until pork is
cooked through, stirring occasionally, about 10 minutes.

4. Mince cilantro and cheese.

5.Add hominy and beans and cook for about 4 minutes. Add spinach
and stir until just wilted, about 1 minute. Transfer mixture
to a large gratin dish. Sprinkle with cilantro/cheese mixture.

6. Bake 10 minutes. Stack tortillas and wrap in foil. Place
tortillas in oven. Continue baking filling until cheese
melts and begins to brown, about 10 minutes.

7. To serve, spoon filling into warm tortillas and roll up.
Serve with salsa and nonfat sour cream, if desired.

I figured it out and I think it comes to 8 grams of fat
