Title: Meatloaf Cake
Yield: 8 Servings
Ingredients
2 lb lean ground beef; up to 2
-1/2 pounds
1 onion; finely chopped
1 c Italian-flavored bread
-crumbs
1 1/2 c ketchup
2 eggs
1/2 ts salt
1/2 ts black pepper
4 c warm mashed potatoes
8 cherry tomatoes; halved
flat-leave parsley sprigs
Instructions
Preheat oven to 375øF. Coat a 10" Bundt or tube pan with nonstick cooking
spray.
In a large bowl, combine ground beef, onion, bread crumbs, 1 cup of the
ketchup, the eggs, salt and black pepper; mix well. Place in the prepared
pan and spread remaining 1/2 cup ketchup over the top of the meat. Bake 1
to 1 1/4 hours, or until the juices run clear; drain off any liquid. Allow
to sit 5 minutes, then transfer to a serving platter. "Frost" the meat
loaf
with mashed potatoes and garnish the bottom edge with cherry tomato halves
and top with parsley sprigs.
